Temperature Control and Cleaning

A fermenter has two jobs: hold the ferment at the temperature you set, and come clean every time. Yeast generates heat as it turns sugar into alcohol and carbon dioxide, and one unclean surface can spoil thousands of litres in a single batch.

We build fermenters for wineries and breweries to your volumes, cellar layout and process. Every tank is drawn in 3D and approved by you before we cut steel, then built in our stainless-only workshop and delivered to your site.

What Goes Into Our Fermenters

Each fermenter is specified for your product, batch size and cellar. These are the options we go through with you.

Cooling Jackets

Jackets sized to the heat your ferment gives off, piped to your chilled water or glycol supply so you hold the temperature you set.

Conical Bottoms

Conical bottoms drain fully and let you draw off yeast and lees. Dish and flat bottoms suit storage and some red ferments.

Variable-Capacity Tanks

Variable-capacity tanks with a floating lid let one tank hold a part batch without leaving headspace.

Clean-in-Place

We design CIP into the tank, with spray balls positioned so every internal surface is reached.

Valves and Pipework

We supply and fit the valves, valve clusters and sanitary pipework that connect your fermenters to the rest of the cellar or brewhouse.

Tested Before Delivery

We pressure test in our workshop where the design calls for it, and carry out dye penetrant testing of welds in our workshop.

How We Build Fermenters

    Design

    We model your fermenters, jackets and pipework in 3D and issue approval drawings that fit your cellar or brewhouse.

  2. 02

    Fabricate

    Our welders build each tank in our stainless-only workshop, then test it before it leaves.

  3. 03

    Deliver

    We deliver your fermenters to your site, anywhere in Australia, freighted from our Murarrie workshop by Russell Transport.

  4. 04

    Service

    We carry out repairs and modifications in our workshop.

Can you deliver fermenters interstate?

Yes. We deliver to every Australian state and territory.

Should my fermenter be 304 or 316 stainless?

304 suits many wine and beer applications. We recommend 316 or 316L where your product, cleaning chemicals or sanitising regime is harder on the steel, and we confirm the grade on the approval drawing.

What sizes can you build?

We build fermenters from 100L to 250kL in our workshop, depending on configuration. Larger tanks are fabricated in our workshop and assembled on site, on request.

How long does a fermenter take to build?

It depends on the size, number of tanks and jacket design. We give you a delivery date with the quote so you can plan around vintage or a brewhouse expansion.

Can you match the tanks we already have?

Yes. We can measure your existing tanks and draw new ones to match their footprint, outlets and pipework connections.

How do you make sure the tank cleans properly?

We design the spray balls and their positions so the cleaning solution reaches every internal surface, including around fittings that could shadow the wall.
